Lamb and plums pair wonderfully together, particularly when the plums form the basis of a delicious Italian agrodolce.

Ingredients & Instructions
  • Burger

    800 grams lamb mince

    3 tablespoons pine nuts

    1 shallot, peeled and diced

    1 teaspoon ground coriander

    ½ teaspoon ground cumin

    ½ teaspoon ground cardamom

    2 tablespoons chopped fresh coriander or parsley

    Kosher salt and freshly ground pepper to taste

  • Plum Agrodolce

    1 teaspoon olive oil

    1 shallot, finely diced

    ½ cup red wine vinegar

    ¼ cup Shiraz

    1 tablespoon brown sugar

    2 tablespoons capers

    3 plums, diced

    salt and pepper to taste

  • To serve…

    Burger rolls or Ciabatta

    2-3 tablespoons soft goat cheese or Chevre

    Sliced English or Lebanese cucumber

    Lettuce

Step 1

To make the burgers, place the ground meat in a large bowl and massage through the other ingredients with hands. 

Wrap and refrigerate 1 hour to overnight, to allow flavours to develop.

Step 2

Just before cooking the burgers, in a small saucepan, heat the olive oil over low-medium heat and cook the shallot until soft. 

Add the vinegar, Shiraz and sugar and simmer until reduced to a syrupy consistency, about 8-10 minutes.  Add capers and plums and cook until just softening, but still holding their shape.

Set aside, or refrigerate to use chilled.

Step 3

Bring burgers to room temperature. Preheat barbecue or grill pan.

Step 4

Cook the burgers over a medium to high heat for 6-7 minutes each side or until cooked as desired.

Step 5

Grill cut sides of ciabatta and spread with goat cheese, top with the cucumber and lettuce.

Place burger on top and spoon over the hot or cold relish.

Ingredients & Instructions
  • Salmon

    4 salmon fillets, about 180g each

    Salt and freshly ground pepper

    Olive oil, for cooking

     

  • Peach Almond Brown Butter

    4 tablespoons butter

    2 peaches, diced

    50g roasted almonds, roughly chopped

    Zest of 1 orange

    1 tablespoon chopped fresh rosemary leaves

    1 teaspoon red wine vinegar, optional

     

  • To serve…

    Wilted greens such as spinach, kale or chard

    cracked black pepper

Step 1
Heat a thin layer of olive oil in a grill pan or heavy based pan.
Step 2

Season salmon and cook, skin side down for 2 minutes, then turn and cook as desired.

Step 3

While salmon is cooking, heat butter in a small skillet and cook until bubbles subside and the butter is starting to colour. Add the peaches, almonds, zest, rosemary and toss in the butter until all are warm.

Step 4

Add the vinegar if using (it adds a little zip to the butter).

Step 5

Serve the salmon over warm greens or preferred vegetable and spoon over the hot peach almond sauce.

A classic buttery risotto is worth every minute spent stirring and enjoying the aromas, to make a luscious bed for the bright roasted Californian peaches and rich salty pancetta. 

A perfect weekend dinner to impress your guests coming in from the cold night air.

Ingredients & Instructions

  • Risotto

    1 litre chicken or vegetable stock

    3 tablespoons olive oil

    1 white onion, finely diced

    350g Carnaroli or Arborio rice

    1 cup white wine

    3 tablespoons butter

    ¾ cup freshly grated parmesan cheese, plus extra for finishing

    ¼ cup chopped parsley or basil

    ½ teaspoon freshly grated nutmeg

     

  • Roast Peach Pancetta Crumble

    6 slices pancetta

    4 fresh peaches, diced

Step 1

To make the risotto, heat the chicken stock in a large saucepan and keep warm over a low heat.

Step 2

In a large, heavy based saucepan, heat the olive oil on low heat, add onion and cook until soft but not brown. Stir in the rice, ensuring all grains are coated in oil, turn heat to medium, and cook 2-3 minutes, stirring, until rice begins to look translucent.

Step 3

Add wine and cook, stirring, until wine is absorbed. Add the stock, a cup at a time, stirring frequently until each cup of liquid is absorbed. When all stock is absorbed, turn off heat, add butter and parmesan, stir quickly and cover pan for a few minutes before serving. Just before serving, stir through parsley and grated nutmeg.

Step 4

While risotto is cooking, lay pancetta on a parchment lined baking tray and cook in a moderate oven (375°C) for 15-20 minutes, or until pancetta is browned and crispy. Add peaches to tray and bake an extra 5-6 minutes. Crumble the pancetta into small pieces.

Step 5

To serve, spoon risotto into bowls and top with the warm peach and pancetta crumble. Scatter with extra parmesan.
